I think I read somewhere that the reason they wrote it like that was in case one side was obscured/ unable to be read. If one could only read one side for whatever reason, they'd still get either the message

You're picturing yourself standing in front of those doors and one of them is thrown open as a herd of walkers stumbles inside wanting only to devour you and you see the words "DONT OPEN" and are thinking....too late
