I find the consistency of the uncooked inside of the steak kinda gross if its rare. And also I'm paranoid that the bacteria of the raw meat isn't killed unless thoroughly cooked. Medium is a low as I go.

Well you're entitled to your opinion and I respect that.
Personally I find anything past medium-rare too tough to be truly enjoyable but that's just me and I won't force you to believe that. Though I do suggest trying the other "doneness" of steak, just to compare. After all if you only eat well done then you'd obviously think well done steak is the best or steak as a whole tastes like tyres.
