you have your pan too hot, sir. unless you like it to have that spongy texture and burned look.

It takes longer, but you need to try it once with very low heat. also, use more oil than you need, good olive oil works best. never butter, that just helps it burn. a lot of people like to put a little milk in theirs, i suggest not doing this either. the best thing you can do aside from low heat is to just beat the holy shit out of it in the bowl with the spices you plan to use. whip it whip it whip it.

you have very good closing and flipping skills, yours is very symmetrical and has even cooking all over, not too lumpy or bulging.

if you like parmesan cheese @ all, try using that instead of your normal cheese. it was all i had one time and it turned out to go great in it. also, if you like meat in them @ all, cook that seperately before adding.

I love to cook, its a great hobby and makes you enjoy what you eat more, imo.
