Like it's a small moment of humanity in him, that Anakin is still in there somewhere leving hope he can be redeemed.

Anakin coming back to the good side in the sequels would be really cool if done in a believable way

The only way that would be done is if his spirit guides Luke.

Don't forget that he removed Anakin's eyebrows in the 6th film to, just because that is how it was meant to be seen!
