Here's my own little tilt-shift that I took and edited for a physics project last year, I know it's not nearly as good as the ones in the OP, but I think it turned out alright

Blurring the top and bottom mimics the effect of a shallow depth of field, which gives the appearance that we are very close to subject, and focusing on a very small portion.
For this to make sense, bring your eye close to a page of text. As you read, only a small portion will be in focus. Try to change the focus with objects across the room. Completely different due to the relative subject-to-lens distance ratio
