well, it is an easter egg. death on the mississippi (the one with the boat and 7 targets). google it, and you get full instructions (don't remember what do do specifically to gett the easter egg unlocked. I have done it myself a couple of times.

Needless to say, bring a LOT of ammo. once you activate the mode, the entire ship will be after you- disguises won't work. also painkillers would be beneficial.
