In MMORPGs, there is no limit to how many lives one can have.
.... You just made me realize how long it's been since i played a game with limited lives.....

that's ridiculous
in the past, we needed to make games insanely hard and with as few lives as possible to make them last
really, how much would mega man II last if it didn't had those insanely hard bosses, the extremely few lives and having to start all over again? Not much longer than a smartphone game
but with time, games could be made longer, more complex, more developed
now you don't need to have 2 lives the entire game to make it last, they already last 10 hours on their own
and if you like challenge, much of them offer a extra hard mode, instead of the "PLAY THIS OR YOU'RE FUCKED!" mindset of old-timey games
TL;DR:
so it hasn't been "dumbed down", it just changed. Its not necessary to keep the old elements of classic games in the new ones.
They're too different. (and I mean, "comparing pong with mega man II" different)

You'd think after getting game over once we'd learn, but no. I have been asking myself this question every time I play a game since I was 5.

You play the game like it's the last one, you scratch and claw and sweat your way to the end of the level then at the very end when the princess is in sight and the giant monster kills you and all hope is lost.
You get.
One more.
chance.
