In Tolkiens world, power calls to power, and the Eagles are amongs the oldest, wisest and most poweful beings in the Middle Earth. Therefore it is likely to believe that the Ring would have easily corrupted them, and created a "Tyranny of wings and feather" (think that's an actaul quote from the book).
The Hobbits, who are not wise, nor old or powerful, would therefore prove to be alot more capable ringbearers, since the Rings influence on them would be limited.
This is also seen in the way it corrupts Boromir.
Boromir was only in close vicinity to the Ring, and it stole his mind.
Frodo had it around his neck for three whole books, and only in the end it won him over."

Didn't want to be a douche and take credit. Also I had it copied because I sent it to a few friends on facebook. Also catapult wouldn't work because if you flung it and missed, you'd die and they would have the ring. Plus there's no gaping hole into the volcano, you need to walk through the entrance. Ring alerts Sauron so obviously couldn't just wear and walk.

It's not that they didn't want to, necessarily, they just couldn't risk it because the eagles were their own intelligent, independent faction. The movies just makes em big birds.
