Because here in MURICA if we say it people see us as racist regardless of context usually and we would get jumped, have bones broken and our teeth busted out even for ACCIDENTALLY saying it. And then when the courts find out we called some black guy a nigger the assault charges would be dropped.

It's because white people are weary of being racist, seeing as in America (at least, I'm not sure about everywhere else) Whites are the only people that can possibly be seen as racist, so a lot of people feel they have to go to extreme measures to be politically correct.

Interesting, to be honest though i thought Django was a hilarious movie up to the half way point... After that i got a little ridiculous with all the blood and so on
