I love that it's 3 movies. They could've so easily made each dwarf feel exactly the same, but they took the time to give every one a smidgen of scene to give them personality. And even then, we have a feel that these aren't elite, badass dwarf soldiers, but a motly crew of coal miners and toy makers and ****. If they did everything in one movie, they wouldn't have been able to give every scene as much character as they did.

Peter Jackson knows how to transform Tolkeins work to the big screen very well though, the LOTR films were perfect in my eyes, and The Hobbit has kept up the standard as far as i'm concerned.
