Every creature is evolution in progress. It's not like we are finished products. While I understand why you think this creature epitomizes evolution it is the same as all of us, at this point in time all it needs is those little limbs. Maybe further on in it's evolution they will go away, maybe they will become more defined.
even when something like that happens
life eventually find a way to restart
beside not ALL life forms would be wiped out because there are life forms everywhere on earth
i am certain that at least some bacteria, viruses and what not will survive
especially those deep in the oceans
and life will continue without us
but with plastic

I think it's more just going to be a direct reversal of what happened before. It expanded out of a theoretical nothing to start with and regardless of how many iterations the universe has gone through you'd expect it to revert to that same nothing.
Or maybe I'm seeing things as too black and white.
