Evolution and a single mutation are not the same thing. I is quite possible that this mutation will not be passed on and therefore we cannot consider it evolution.

So what you're trying to say is... this isn't even our final form?

Well if all life on earth is wiped out by some cataclysmic occurrence, then one could argue that the last form we possessed beforehand could be considered our "final form".

even when something like that happens
life eventually find a way to restart
beside not ALL life forms would be wiped out because there are life forms everywhere on earth
i am certain that at least some bacteria, viruses and what not will survive
especially those deep in the oceans
and life will continue without us
but with plastic

What about when the universe finally reverses and collapses in on itsself? I know that's a distant likelihood but isn't it possible?

I don't think a black hole is the same as the universe collapsing in on its own mass(?).

i'm not sure what it might do i don't know much about space
but won't it then just turn in a giant black hole?

I think it's more just going to be a direct reversal of what happened before. It expanded out of a theoretical nothing to start with and regardless of how many iterations the universe has gone through you'd expect it to revert to that same nothing.

Or maybe I'm seeing things as too black and white.
