What I don't get about this whole mechanism is how it is deployed? I mean, I guess it happens if you bend your wrist (hand) back, but that motion has to be done while doing some epic parkour?

The hidden blade usually goes on the non-dominant hand. In AC2 they introduced a second hidden blade though, which went on the right hand.
