It's something like 76% of people in Northern Ireland wish to remain part of the UK. Since The Troubles ended, republicanism/nationalism has pretty much died out in the North.

Not exactly, more militant republicanism died out, nationalist parties still hold 43 seats in the assembly, compared to the 53 unionist seats.
Hell, in the last election both of the traditional unionist parties' vote share declined, with the UUP completely collapsing in Belfast. Saying that Nationalism has died out is pretty ludicrous.

In Quebec the secessionists hold the most seats, despite only 28% of Quebecois being in favour of secession.

In Northern Ireland many Catholics still vote for nationalist parties despite being pro-Union simply because of the stigma associated with the protestant history of many of the other parties.

Party seats don't accurately represent the views of the populace.

That is true to some extent, but it's the only reliable method of statistic gathering we have. Every other survey has either been on a ridiculously small scale, or very leading; that's for both ones that favoured nationalism and unionism.
You're also leaving out the part of the populace that goes fo the union less out of being pro-union, but more because they don't really care. With the peace process and the like, they have no reason to favour either side. In a referendum, with a bit of a push they could swing either way.
You also have to factor in the rising Catholic populace, with a higher birth-rate within the next fifty years, the chances are the Catholic populace will become the majority. That moment will probably bring a massive outburst of nationalist feeling that could easily swing the balance. That's all hypothetical though.
