A standard olympic bar is 45lb, with two 45lb weight plates, that makes it 135. Some bars are 35 lbs, but those aren't the standard. I've also seen 15 lb bars, but those don't even fit the olympic weight plates on them (holes are too small). Squats don't only work your quads and your hamstrings, they also work your core muscles (abs, erector spinae which is lower back, and your obliques) to keep you stable and from falling over. He's using that stability ball to magnify the working of his core. He's not just an idiot, he's got a spotter. I wouldn't recoment doing this if you are new to weightlifting and don't have a spotter.
