an organic poison would break down over time as the enzymes denature, becoming less potent. not entirely sure about synthetic shit but i would guess the same holds true.

Most chemical mixtures start to lose their potency in time, getting replaced by oxygen, water and stuff like that. So in time the poison'd become less poisonous.

The guys who started one of the World Wars (I think No. 1), by assassinating the Serbian dude, took expired cyanide as a way out so they didn't get captured, but because it was out of date it didn't kill them, it just made them throw up loads. So I'd go with less poisonous.
