THe wrestlers would dominate, you can argue what you want about the fencers, archers, boxers and such, but this would be in an environment where they wouldn't be able to line up shots or follow set rules and Wrestlers are by far the most well rounded athletes which would be ideal in such a situation.

The archer's would stake out the food supplies and pick off the wrestlers who would get hungry fast to feed their high calorie intake.
Weapons specialists would dominate. Javelins, archers, hopefully they wouldn't let anyone have rifles, that doesn't sound very sporting :p

We don't have high calorie intake, unless you mean heavyweights, we most notably starve or diet intensely to cut weight. We perform at high levels with very little to no food. Hunger would be a minimal factor on Wrestlers and possibly boxers as well. Sharpshooter would just be shit outta luck, and if the weapon specialists failed to procure a weapon they would be pretty screwed as well, and their ability to perform on the move and in combat situations would be up in the air considering that their typical obstacle is only distance and wind direction.
Actually Jiu-Jitsu would domninate they have a style of fighting that would dominate any wrestler. The boxers back peddle and start trowing punches like crazy and anyone with a back ground in MMA (asuming some Oympians do) would just do a technique I like to call cow catching witch gives you the advantage when it comes to fighting on the ground.

If anything I'd expect the Wrestlers and Jui-Jitsu Olympians to team up initially like the Careers, creating a powerhouse to just pick off everyone else. Between the two it would be a real toss up, Most wrestlers are familiar with submissions, perhaps not to the extent that Jui-Jitsu focuses, however Jui-Jitsu does have a tendency to go to the back as an offensive move and a boxer or runner would most likely get caught in an easy hold from their, but a wrestler, who would have a feel for the movements, the two would give each other a serious run for their money. I'd pay to see it. I'd imagine, unless their very crafty, soccer an tennis players wouldn't last too long though, not the most combat inclined.
