Psychic's weaknesses are based on fears. Lots of people are afraid of Bugs, Ghosts, and the Dark. Bugs resist Psychic because they have a hive mind, and psychics find it hard to comprehend that alien brain structure.

"Grass beats water because people water plants" is all I keep hearing.

That doesn't explain why water takes double damage from it. Plants float in water all the time and it's fine. And btw, haven't you people heard of over-watering? you can easily drown a plant with too much water.

Justify it all you want but it's obviously a balance mechanic. It really doesn't make sense.

If grass absorbs water then water attacks should do little damage against grass types but that doesn't mean grass types should do extra damage to water types. It's not like water pokemon are actually made of water.
