well in this case it's a word that names a Person. like in "i am (a) single"

No it isn't. You're right that in the sentence, "I am a single", single would be a noun but that doesn't make sense because it isn't. You could say "I am a single person" in which person is the noun and single is still an adjective.

in your sentence "person" would be the noun. In fact "single" can be used as a noun or an adjective. Dammit guys, english isn't even my native language. Why do i have to tell you, how your grammar works?

that actually depends on how you take it. because the context, depending on the person, could be as you stated it, or it could be an adjective describing a person.
