That would be because carrots are brittle, and so snap easily when bent. Try cutting a carrot with a spoon, and you'll get the idea.

Actually, they're basically the same density. What's more, cartilage is flexible, so it's easier to bite through.

Actually, they're really not. Maybe in a larger joint like the knee, but the fingers have to be delicate to allow for fast, articulate movement. Your fingers are actually really weak.
