The way the "Cola Mentos" jet works is that the mentos's coating have microscopic "Pits" that allow CO^2 bubbles to form on their surface, faster than they can in the edges of the bottle.   
   
This causes a load of CO^2 to go from a sublime state to a gaseous state rapidly, causing bubbles to shoot out of the top at high velocity.   
   
It works better in Diet colas because the artificial sweeteners can crystallize on the surface of the Mentos, causing even more pits to form, more pits = more bubbles.
