Candy people are unstable creations, when they get scared they explode. This might be a brought on by a blood pressure spike. Since they have bones, they probably have a circulatory system as well. Princess Bubblegum was able to bring the dead candy people back to life, would it be so strange that she created them in the first place?

The length of Princess Bubblegum's rule is questionable, since one year ago she wouldn't have been able to rule the Candy Kingdom. Andy Ristaino suggests she may not be as young as she appears

Although candy people generally explode when scared, she has been scared and even terrified many times during the series and never blown up, possibly because she is more of a humanoid than any other known candy person. (indicating the royal family is a different specie than the others)
