G-force is associated with an object is its acceleration. When you turn or accelerate EVEN in space, you are effected by G-force.

If you were to spin a bucket, whether on earth OR in space, the acceleration causes G-force, which causes the water to pool to the bottom of the bucket.

Also, they don't always pilot in space. They are planet side and lower plenty of times.
