The reason behind that is because as you're going to sleep you start to relax, but if a part of your brain is still awake, it will notice your relaxation, and it will think "he's/she's falling", and then it will try to stop the failing any way it can (it can't) with twitches to your whole body, so then your whole body goes to flight or fight responce, waking you up, it is called a hypnagogic jerk

When you're asleep, almost all of your muscles are loosened up, because of this, your brain thinks that your body is not supported and thinks that your body is falling, so your brain sends a message throughout your body and that message forces your body parts such as legs and arms to jerk up. Not because your brain thinks you are dead, it thinks that you are falling or you are not supported.
