the degree is based on how many layers of skin were burned through. So a 3rd degree burn is when you get burnt down to the 3rd layer of skin

We don't actually use 1st, 2nd, 3rd degree anymore in the medical field. We use surface, partial thickness, and full thickness, because they're more descriptive of the actual damage caused by the burns.
Being an EMT is gross sometimes.
