Bears are fucking assholes, the hints and tips thing on the loading screen says they wont attack unless provoked or approached.
My ass, I'm walking merrily on my way and all of a sudden there's a goddamn bear smacking my shit from behind.
Bears = number one cause for horse death.

There are caves full of them scattered around the map. There is one called Honey Caverns or something a little southwest-ish of that town you go to to climb the stairs to the greybeards, I believe.
