The more simple an organism is, the more likely it is to survive because they can tolerate higher doses of rads.
Most insects will survive the fallout, depending on proximity to explosion and whether or not the resulting explosion's shockwave hit them with enough pressure/force.
Within a set radius, the explosion is as hot as the sun (Nuclear fusion releases energy the same way in the sun) and will be vaporized. No ashes, just charred earth and rocks formed from pressure.

tl:dr Most insect will live, and some longer than the roach.

As other people explain, yes the explosion would kill cockroaches. But also the radiation would kill a number of them as well. We get cancer because our body undergoes mitosis at a high rate - relative to cockroaches. So this leads to mutation of cells and they go overdrive on mitosis. Thus we get tumors along with all other problems that follow radiation poisoning.

The only reason we say that cockroaches are immune to radiation is simply because they undergo mitosis much less frequently. So they aren't immune to radiation, it's just less likely that they are affected by it.

so if we get nuked
and some cockroaches live
and nobody is there to squish them and such
will they start to evolve and adapt?
and eventually bring about another existence of humans?

Just figure I'd say this now.
Cockroaches can't survive nuclear explosions. They'll die just like any other creature. However, some cockroaches will hide in small cracks that the radiation can't reach, therefore allowing them to survive.
