The sun is not exactly white, its every part of the light spectra and we can't see each color without proper filters so it only appears white. Use certain filters and you see the different colors the Sun emits without the others. We only  see on the visible light spectra, you're still forgetting about infra-red, gamma rays, ultra-violet, radio waves, microwaves, and x-rays.  White itself is only just a bunch of colors slammed into one and how our eyes can't handle the varying ranges of electromagnetic radiation in the form of photons so we merely see it as "white". The truth is that the Sun is a huge variety of colors, and light that we cannot see because our eyes are not sensitive enough to see them. The Sun only appears to change colors during the day to its angle and how it hits water molecules in the air and filters light into various colors.

but the fact is, to our eyes, without any distortions, the sun is white. I don't got a clue what it looks like to a mantis shrimp though

Something that also affects it is the Doppler effect. We're receiving the waves from the star and the wavelength determines the color. However the star is moving away from us at some random speed which affects how we receive the wave. Usually makes the wavelength longer and thus changes the color.

When electrons are excited to other energy levels through the input of...you guessed it, energy...They emit light. Electrons jumping to different levels and coming back down emit different spectrums, which I think results in the differently colored stars

It's like how copper burns green and potassium burns purple

When you think about the vastness of the universe in comparison to the tiny speck that is the earth, you realize just how much of the universe doesn't really matter.

Seriously, 400 nonillion cubic light years of observable universe and at best a trillionth of a cubic light year matters. That's 42 orders of magnitude of wasted space. So inefficient.
