the chain has a certain bend to it, it does not want to go beyond this bend, and the weight of the chain pulls so heavily that it forces it to drop at this speed, the bend being unable to keep up with the speed, the downwards pull of the weight, makes the chain pull upwards untill it can complete it's bend, due to upwards being it's only escape.

The one he crafted, possibly. But you can do this same experiment with a 100 ft/50 meter length of beads. It works best the higher the beaker/glass is held before removing the beginning strand. I could explain this, but not nearly as eloquently as a video someone has linked already.
