The shot is meant to look real, and in a way it is. What it suggests is the wielder of the knife cuts a woman's eye. In fact if you look at the second shot it looks to be some sort of animal(goat or cow or sheep). So it is and isn't fake, you're just watching the eye of some livestock get cut.

no, you're not doing it right, the internal juice of an eye is black, and a lot less goopy than that.

Actually, the internal juice of the eye is transparent (it has to be else you wouldn't be able to see shit).
BUT
When you cut an eyeball you first cut through the blood vessels surrounding the eyeball, thus releasing blood. The blood flows into the eyeball and meets the transparent juice. When they mingle it becomes very black.
So you weren't entirely wrong.

My bad. I've never got the juice out without cutting (i'd imagine if you used a syringe or something you could get it out ok) I've only ever used a scalpel on an eye and just kind of chopped straight in.

A syringe would idd be the solution :)
