Not trying to reign on your parade but you almost have it.
It's not the nerves themselves that act up. There nerves are dead, it's the muscles themselves where the reaction of the sodium ions from the soy sauce cause the muscles to contract and extend.

I give you credit for giving the partial answer.

It's quite alright I see this gif all the time with people trying to explain what is happening.

That right there is a great question.
I don't think so because the squid would still be alive meaning that the nerves would be alive and able to control any sort of contraction like above.
Whats taking place above is a chemical reaction from the sodium ions. The Sodium ions contain the energy to cause the muscles to move around and as we know energy is always moving, so when the positively charged ions make contact with the now dead squid you get your flailing about as the energy transfers over!
