Why do you expect that they don't?

Maybe because evolution means passing on genes to the next generation and not just changing whenever there are needs that must be addressed? The Galapagos islands are the best example of this. Flocks of finches would somehow get to the other island. The ones with beaks most fitting to get food passed on their genes until all the finches on one island had a stronger beak for cracking nuts, and all the finches on another were more suited to eating bugs.
