Staged is the better term to use. Short of hologram technology, it's not really possible to "fake" the action that's happening. What does happen is that everything is planned out to some extent, because Wrestling is a show in the end, and a proper plotline requires that the writers know who will win a given match.

In other words, saying that wrestling is fake is like saying that fights in Fight Club were fake.
