we've had occasional "how's it going?" kind of chats, but it's nothing compared to when we both liked each other.

And it sounds pretty beta for me saying this, but I don't actually want her, I just want her as a friend, she's always been cool in my opinion... I dunno, I probably feel intimidated by her

So she isn't currently in a relationship? I say just try to ask again, if it doesn't work, then I say cut your losses, sorry. She may even not want to hang out with you and is just saying 'maybe' as a way to not directly hurt your feelings. I'm not saying this is what is happening but it is possible. So try again one or two more times, then just stop. Good luck!
