Baldur's Gate 1 and 2. Now that they've remastered them, they're even better.    
ES: Oblivion, especially since there's so many admin's minions for it   
Fallout 3 and New Vegas. They look really bad by today's standards but they're still amazing RPG's.   
Romance of the Three Kingdoms 10&11. Pretty fun (quasi?) 4x strategy games, though you can only play 10 with an emulator (pcxs2 is the best if you wanna play.) I never got it to work great though. Either ran at 20-40 or 200 fps. If you want a more modern game they came out with RoTK 12, though there's no good english translation and probably never will be.   
Medieval 2: Total War. Great strategy game. What else can I say?   
Star Wars: Empire at War. admin's minions really make this game shine. Buy the Gold edition if you do buy the game.   
Warhammer 40K Dawn of War+ Expansions. Another great game made better with admin's minions. Use the Apocalypse mod.   
The Bard's Tale. Great RPG with great humor. Think Baldur's Gate with more jokes. Free on Steam.

Games don't age well, the technology grows at such a rapid rate that they can't be expected to. A game that came out twenty years ago is less advanced than a tennis minigame from a third rate game that came out now. We literally have to make an effort to make games look as bad as they did back then, it's easier with the technology we have to make them look better. It's not just about looks either, physics and stuff are light years ahead of where they were, used to be making a ball bouncy across a two dimensional surface was cutting edge. Old games can still be fun but almost exclusively in a novelty or nostalgic way, video games age like hookers, poorly and quickly, I'm just the only one honest enough to say it.

Games that are designed well age well. It has nothing to do with the capabilities of the hardware or software. Take any new triple-A game, say, Watch_Dogs. The game has new engines, and realistic graphics, but it falls short of games that were made in the past, because it was designed poorly in comparison to much better games. The "better" things you describe are shallow, and in fact make older games better, because they had to work with much less than they do now. They didn't have any fancy engines or graphics. The only way you could make a game people liked was with pure, unadulterated design skill.

It's pretty ignorant to say that not even one game has sustained through the ages.

You say graphics aren't all that matter, but still go on about how important the technology is. A good game, a fundamentally good game isn't defined by its technology. A good game is usually the kind of game that does a lot with a little.

I'll use the game I named, Tetris, as an example.

Tetris is a very simple game. It consists of a number of shapes made up of four blocks falling into a section. The object of the game is to keep the section from filling to the top. As you fill in a row, the blocks vanish. More blocks fall, and can be controlled by the player. The blocks are randomized to keep players from depending on patterns. The speed is constantly increasing to ensure failure. A score is kept to encourage players to try again for higher scores. The shapes are made up of four blocks to allow a level of complexity without too much complexity and horizontal sliding.

Tetris does not need better graphics, physics, controls, or more ram to be created and played well. The simplicity of the game is what allows it to be as tight as it is. It is developed to be perfectly as is, and too imply a game as simple, yet as compelling as tetris requires improvements in tech just to stay entertaining is like saying Baseball needs more physics for it to improve in time.

Of course. The game is insanely popular among classic PC gamers, and strategy gamers alike.

The new game is not a replacement, but simply an alternative. I'm glad we have fan projects like OpenXCOM that try to make these kind of gems the best that they can be.
