I don't play Grey Knights, but from what I've heard/ read online, is that they're pretty good at close combat due to their force weapons and op gear. If you want to beat them, you'll probably want to get devastator squads, stay out of their range and shoot them to bits.

If you are playing against anything with an armour save of anything, in this example 2+ make sure you equip a bunch of AP 1 or 2 weapons to deal with them, that's all you have to do, make sure you can kill them easily and they won't get in your way.

a friend of mine has a 1k list that only has 8 models in it. it goes something like, Astorath the grim as Hq, 5 deathguard with jump pack and power weapons, Lamarties, a death company dread. and a storm raven. it sounds mad but he has won most of his games.

but no. Terminators arnt much of a problem when you roll 100 attacks. eventually your friend is going to roll a bunch of 1s. Your problem is mostly Grey Knights being Grey Knights. Its just what happens when the you let someone who collects the army write their rules.

ur gonna need autocannons in place of the bolters, throw power-swords on you sargents and the like, don't forget to bring a furioso dreadnaught or two. and some meltaguns for squad support. tell me how it goes.

Do not charge Mephiston into GK terminators. You will hit first. They will make their saves. They will hit back and force you with a daemonhammer.

In fact, don't charge him into any terminators. His weapon is AP 3.

GKs don't have much in the way of long range fire power that isn't really expensive. Stay out of the range of their psycannons and shoot them to bits.

Did you charge a terminator squad with only Mephiston?
