It's not french, it was derived from the Latin word "herba" so pronouncing it erb, is just an American bastardisation of the word, no one in England calls it erb.

I'm not sure if you realize this but there are other countries that speak English and they all have their own pronunciations, spellings and colloquialisms that are all equally correct.
