what is the main ideology of the Stormcloaks and the Empire/Thalmor   
I usually join the Stormcloaks, honestly because the name sounds badass (and i like the "age of oppression"),  but i was wondering just what is it thats actually trying to be accomplished.   
The only difference i find is the 'Cloaks want to be able to worship Talos, the Empire does not; The Empire wants to assimilate Skyrim into Tamriel, the 'Cloaks want to be independent.    
Can anyone fill me in on more?

Skyrim has always been part of the empire but the Thalmor (the elves) want to dominate the world. The nords of skyrim are a proud and prideful people and when the empire bent the knee to the thalmor and signed a contract saying that they kind of surrender to the thalmor and will stop worshiping talos.

The stormcloaks thought that made the empire week so they rebelled against the empire and openly worshiped talos. They think they have a better chance against the thalmor alone so they now wish to separate from the empire as a whole

stormcloak want to worship talos, and be independent. and as we know from oblivion talos is clearly a god otherwise you wouldnt have been able to retrieve the amulet of kings.

clearly the thalmor are pagan heathens who try to be bad N' such.

Empire wants to unite and rule all, but the Thalmor kinda beat their ass, so the Empire kinda bowed their heads to them to try and save face. Part of that was banning the worship of Talos, because the Thalmor don't consider him a divine, therefore it's blasphemous to worship him.

Stormcloaks want Skyrim to be independent, so they can do their own thing, though they're primarily a bunch of racist Nords from what I've encountered.

Personally I want to side with the Empire, since saving them was kinda the point in Oblivion IIRC, and they're not all bad people, but I also want to kick the Thalmor's teeth in for being overly zealous in banning Talos worship.

In other words, the empire fights the wrong cause but for the right reasons,
while stormcloaks fights the right cause for wrong reasons.

The Thalmor are part of the Aldmeri Dominion, which is the High Elves' kingdom. The Aldmeri Dominion defeated the Empire in a war, and made the Emperor sign a treaty that outlawed the worship of Talos, as the High Elves didn't think that a mortal could become a divine. The Thalmor are the Dominion's elite group who go around destroying shrines to Talos, killing worshippers, etc and torturing them for information. The Stormcloaks think that Skyrim needs to be independent from the Empire in order to be able to freely worship Talos again, so fight against the Imperials and Thalmor to be free from their rule. Personally, I don't like either of them, given that the Thalmor think they're better than everyone else and really just want to wipe the races of men off the face of Tamriel, and the Stormcloaks think that Nords are the best race, which is why Argonians, Khajit etc aren't allowed inside Windhelm and Dunmer have to live in slums. There needs to be an option of " **** all of you, I'm taking Skyrim for myself!" because they're both arseholes.

The Aldmeri Dominion is more than just the Aldmer though , it's also the Bosmer (who are in there against their will).

K here goes

The Empire is a bunch of more or less independent countries under the rule of the Emperor of Cyrodiil.

Every human country is part of the Empire , including Skyrim.

The Altmeri Dominion waged war against the Empire and won, because the Thalmor (a kind of religious order) think worshipping Talos is heresy to the gods , they forced the Empire to prohibit the worship of Talos so the Empire may keep on existing.

The Stormcloaks are fighting because they think , getting independent from the Empire will bring them their believe in Talos back , the truth is , Ulfric stormcloak is waging war just to gain more power and create a kind of facist Nord state.

The Thalmor are supporting the Stormcloaks behind the lines , because an independent Skyrim means a weaker Empire.

Both the Altmeri Dominion and the Empire are preparing for a second Great War (or world war if you'd rather). The Empire has a good chance of winning , but with Skyrim in chaos or even independent , the Empire will fall and that'd be the end of the Elder Scrolls series (unless the next hero will be an elf or a beast aka Khajit / Argonian)

As I've said, there should be 3 Civil War options: Empire, Stormcloak and SKYRIM'S MINE, BITCHES! That would make the game much better. Also, if Bethesda released all eight of the promised major DLC instead of making a WoW clone, that would be great.

Well I'd like more than 2 options for the civil war as well , preferably a kind of large-ass rebellion , bigger than the stormcloaks.

like ... a rise of the falmer , bandit takeover , dragon invasion (with you as leader of the dragons) or a big war started by the natives of reach , idk what they`re called in the english version

In the English version of Skyrim, the Reach natives are called Forsworn, so-called because they were the first to live there. Also, in Dawnguard, I don't see any point in the battle trolls, seeing as there is a woman who's an expert on the dwemer, so there should really have been a mission where you steal blueprints for a centurion and she makes you one. Also in Dawngaurd, there should have been small Snow Elf villages placed around the map that you can then direct to the big temple thing (I forgot its name) and get special Ancient Falmer weapons and such.

You've got it pretty much down there.

The Stormcloaks do seem racist though. Like the "grey quarter" in windhelm.
