Maybe they just wanted to see how she'd look with white hair.

It's not like art HAS to stick to predetermined colors. And she looks cute anyways.

I don't think light reflection can make completely black hair look light grey and white. Make some of it look very light in shade? Sure. But not make all of it look light grey.
