I think Applejack isn't a great pony because of those things.

She seems too realistic, in just about everything, and that's not what we look for in our fictional characters. Most people want someone whose personality is so out there (with twists and bumps) that it'd be crazy to think someone like that exists. Like Twilight, for example, and how she overreacts a lot.

But in the end, this is all just my opinion and thoughts.

Twilight Sparkle: Overly excited (sometimes in the bad way), with delusions of massive failure. Glued to her studies too much to the point where it impacts her normal life negatively (Smarty Pants, Lesson Zero, etc)

Pinkie Pie: Is not depressed when alone, but simply depressed when she placed so much trust in ponies and they appear to just turn around and kick her in the chest. Now that is realistic, but she's also overly hyper to the point that it exceeds ADHD.

Rarity: You win this round, Hentaifan....

Rainbow Dash: Trying to be the center of attention while also never backing down. The human brain has two modes during dangerous engagements: Fight, when Flight is not an option, or Flight, where we high-tail it out of there. Aassuming that human and pony brains work the same way, it seems incredibly unrealistic that Rainbow Dash would be either too brave and engage in Fight mode over and over, or that her brain never once gives the command for Flight.

Applejack: You just prove my point with this one.

Fluttershy: She does seem realistic in most of the episodes, but my only evidence against it is the Iron Will episode.
