If you think about it, Professor Oak always knew that Ash would end up with Pikachu...
If you remember in Celebi: Voice of the Forest, the little boy that Ash and his friends meet (who had time travelled with Celebi) was Professor Oak as a young boy.
Now, this means that throughout all Professor Oak's time as a researcher in Pallet Town, and meeting Ash, he knew he would have a Pikachu. This makes it a time paradox.
Oak had to go into the future, to see Ash and Pikachu together, so that when he was older, he would actually catch Pikachu for Ash to have, then Ash having Pikachu meant that when the young Oak time travelled that he would see them together and get the Pikachu for Ash (and this goes on forever)
Not only did he know that all of those 3 Pokemon were gone, but he also knew from the age of 10 or so that he would not get any of those three, and would get Pikachu instead.
