Can someone explain to me how players of minecraft do these things? They kinda upload buildings or structures that are already constructed with some kind of softwares or something?

resource/ flying mods and lots of spare time. the design itself is more often than not an artform. lots of meticulous planning.

oh ok but it just seems so inconceivably big. Even with flying, i just can't imagine how they are able to build perfect structures like these. I mean, to me it looks like it would months to achieve something like those castles and gigantic cities.
