People don't appreciate themes, they appreciate art.

If I were to write a poem that went like this:

No one would like it because it's a pile a turds.
Same thing goes for music, if it's not approached in an artistic way, then no one aside from the subgroup that's trained themselves to like that music will appreciate it.

I looked up "best death metal bands" and sure enough "Death" was on the top of on the top of most of their lists.

Here's some of their lyrics:

go in for the kill
always in sight-prey
the time always right-feast
feed on the pain-taste

In my opinion, that's not exactly up to the standard of poetry.

Suicide machine - A song about euthanasia
"Robbed of natural abilities
In death they now seek tranquility

Exactly. It's not the subject matter that's being reviled; it's the QUALITY of the work that's in question.

You'll not find a band with more lyrical quality on these subjects than Death.

Sorry, but no. I've given this genre, and some of the bands you mentioned a fair chance. When it comes to music (and most forms of art), I form an opinion after personal experience. While there are bits & pieces here & there that have potential, there's too much mediocre, and in some cases, outright terrible prose. Add in the caustic quality of the music that accompanies the lyrics, and you have a few specks of gold mixed in with ****.

I'm not willing to dig through a pile of **** to find a tiny speck of gold.

Additionally, if this music appeals to you, and it's available to you, why do you care so much about the opinions of other people? Just enjoy your music, and stop whining about how it's not 'appreciated by the masses'.
