use 21 cards.
tell volunteer to pick 1 of the cards, look and remember it, and put it back at a random place.
when s/he puts the card back (doesn't matter where s/he puts it), take 1 card at the time, and put it in a line like: X X X but only do this 3 times. After you've done that, repeat till you've done it 7 times in total (put 7 cards in each of the lines, 7x3=21) after doing that, ask in which line the card s/he picked is at, no matter where she points, that line HAS to be put in the middle, so if it was the right side one, put it on top of the middle, and the left on top of that, so the right line gets the middle row.
do that 3 times in total, after the 3rd time, put the row in the middle again, take 10 cards away and the 11th card is the card s/he picked.
could probably explain better but nah.
