I read somewhere that extra letters like "u" were actually added by the British to make their language, like, fancier or some ****.

Someone fact-check that for me.

The British have a long history of changing spelling to make it seem more Latin-derived than it really is. The biggest example is the changing of 'det' to 'debt' to make it seem as though it were from the Latin 'debitum.'
