actually it's a microcontroller switching the tesla coil on and off real quickly..
So it's not the different voltage, it's different frequency on which the coil operates..

Firstly, electricity causes vibrations when it moves through the air which causes the sound you hear. You can then change the frequency of the electrical discharge by feeding the root voltage and an audio signal through some circuitry which will combine the two and give you different pitches by forcing the electricity to discharge at a frequency that you want it to.
