what if they make a mistake?

Science is only the act of proving or disproving something. A theory or hypothesis may be disproved, but science never lies.

If they make a mistake, they will try to fix it.

Mistake? How? When one practice science, one first finds a question one wants the answer to. Then one make an hypothesis about what one believes the answer would be. Then one run tests based on the question and the hypothesis. The results of the test then either strengthen or weaken the hypothesis. If the hypothesis still stands, it becomes theory. If the hypothesis was wrong, one makes a new hypothesis and run tests based on that. This is done until one finds a hypothesis that is strengthened by the results from the tests. However. As science evolves, we get newer and more accurate instruments, and the same tests done with a more accurate instrument will sometimes give new results. This is why we may see "mistakes" as you call them. When this happens, theory is changed based on the new results and evidence. And sometimes, a theory is connected to other theories, making them all have to in some way be adapted. This way of practicing science is whats called empirical method. This method also states that there is no way to be 100% sure about something, because we can never have 100% of the results.
