Well you need to consider that though the universe may be expanding its not as if were heading away from it. Were still in the universe regardless of its size. And even more odd is the fact that we don't really know whats going to happen to it after a while and weather it will continue to expand or if its simply just infinitely big. There are those who think it will shrink as well which i personally done think will be the case.

was it Einstein who said the universe is made of a substance similar to a fabric, on the smallest level and that once the momentum of the big bang, in countless years, has turned into other forms of energy that the universe will like an elastic band collapse into itself becoming super dense and forming a second big bang? or second as far as we know it

Yes but the fact is that when it comes to such extremity's on how large the universe may be or how large it is you can only speculate and though Einstein was a brilliant man he himself stated that he hoped to be wrong on some of his accounts so people could compare and contrast theory's from a base. Either way both theory's have the same relative chance to be the case but i personally don't think that space can collapse upon itself in such a way that it expanded.
