The main reason why I have a very hard time believing evolution is that no animals are continuing to evolve. If Monkeys evolved into us humans, why are there still Monkeys populating parts of the planet? And how did Fish learn to walk on land? If I took a Fish out of water, it dies.

The question of why there are still monkeys would be a good point, except that humans didn't evolve from monkeys. Humans and monkeys both evolved from some now-extinct ancestor species.

Fish didn't learn to walk on land. Individual organisms don't evolve during their lifetimes, evolution happens when some organisms with disadvantageous traits die and don't reproduce. The reason there are different traits at all among populations is because of naturally occurring genetic mutations, which are almost always bad but occasionally help the organism survive and have more kids (especially under harsh conditions).

Evolution wont happen in one human lifetime but a few.
It doesn't happen instantaneously.
It takes a lot of time.

Also vestigial structures are a great example of evolution.
Ex. Whales have hipbones.

On the off chance you're not trolling, I'll explain. Contrary to what some people will tell you, humans didn't evolve from monkeys. Monkeys and humans both evolved out of two separate evolutionary lineages from a single common ancestor. Evolution isn't just a line, it's a tree, starting with the earliest organism, which branches out numerous times to form the increasingly complicated and diverse organism we have today over millions upon millions of years.

And animals are still evolving, it's just usually such a slow process that we don't notice it. However, it can be noticed in some cases, such as with the flu virus. The reason there's a new flu vaccine every year is because the virus itself is constantly mutating and evolving.

And yeah, it can be kinda complicated. I find that most of the people who don't believe in it do so because they either don't understand it or understand it wrong.
