not sure but the electromagnetic field created by the copper spiral makes the metal spin around so fast it melts?

Well, close. The electromagnetic field moves the electrones in the copper, heating it up pretty fast.
Induction heation is also used to temper metals. You can get the metal to more than 1200°C in a few seconds. Pretty neat.
