He says it's like doing geology without believing in tectonic plates but tectonic plates is still a theory which means there are geologists who don't agree.

Who gives a shit if a few people don't agree? Or even if the theory is false?
The purpose of theories is to give possible, reasonable, well-founded explanations of certain observable phenomena. Once you assume these theories are true, it opens your mind to extrapolations of that theory, and allows you to further experiment with the phenomena.
Take the theory of atomic structure. One of the first theories assumed that the atom was largely solid matter. Then came the gold foil experiment that said "Hey, if atoms are mostly solid, then shooting radiation at them should cause the radiation to bounce off". Lo and behold, most of the radiation penetrated the atoms, and from then on we knew that atoms are mostly empty space.
However, if you ever close your mind to a theory without experimenting extensively, then you're handicapping yourself and everyone who's depending on you to find the answers.
TL;DR - Theories exist not to be absolutely true in all cases, but rather to guide further discovery. Even if evolution turns out to be false in its current understanding, us believing in it has led us to many discoveries that would not have otherwise been possible.
